cooky cukes

yesterday i talked about making a cucumber salad from the ginormous cucumber we picked in our garden

wellz – here is the recipe – i’ve got to give the hubster props for this because it was his idea to make it and he was the one to figure out just the right amount of goodness that was needed to make it quite tasty:

JC’s Cucumber Salad
1 large or 2 small cucumbers sliced very thin
1 red (or white) onion sliced very thin
1 c. white vinegar
1/2 c. water
3/4 c. sugar
2 T. fresh dill chopped
salt and pepper to taste

1. mix the vinegar, water, and sugar in a small saucepan and bring to a boil
2. slice your veggies and pick your dill while you’re waiting for the liquids to heat up
3. after the liquids come to a boil remove them from the stove, let it come to room temp
4. mix the liquid with the veggies in a bowl, add some salt and pepper to taste then stick it in the fridge for a couple of hours (the longer the better, as the juices soak into the cucs)
