it all starts on the fourth

4th of july weekend has always seemed to seal the deal for me as the epitome of summery goodness, it almost feels like summer never truly starts until now–>

lazy days spent soaking up the warm rays at the beach

submarine sightings are always a must – NOT! where did this thing come from?!
cooling off in the surprisingly non-jersey-like clear waters
bbq’ing with friends and family
falling into a burger eating coma
kayaking around the river

picnicking on riverside beaches that made us feel like we on the set of LOST

pretending you’ve gone back in time to when motors and digital devices were non-existent
picking veggies from the garden to eat that night for dinner
getting lost in the heat of the flames alongside the firepit
ooohing and ahhhing to the many, many firework displays

last night’s harvest

the beets and the carrots turned into grilled bits of goodness when tossed with a little bit of olive oil, salt and pepper

the cuc made it’s way into a wonderfully fresh salad

and i created another ‘salad’ with the leftover grilled corn on the cob from friday nights festivities

a Simple Corn Salad
corn de-cobbed (i used 7 ears, 5 would probably suffice)
medium red onion diced
3 T. white wine vinegar
3 T. olive oil
a handful of fresh dill and basil finely chopped
salt, pepper and a pinch of sugar

i hope you too enjoyed your long weekend of good ol’ american par-tay-ing
