you may have seen this dish before, a la Mel, at our casa one night for dinner – it is by far one of my faves in the taste department (who could refuse the sweet and salty combination) and is so, SO easy to make, especially when you are busy entertaining friends and family and dont want to bother with whizzing around the kitchen like a chicken with your head cut off… you know you’ve been there before.

enter, the great american maple chicken sweet potatoey goodness… i have to admit tho, i sometimes make this with both regular potatoes and sweet potatoes for the non-sweet-potatoe-loving-memeber-of-the-house=JC… he really doesnt know what hes been missing, but the man sure does love his carbs :0)

ROASTED CHICKEN WITH MAPLE SWEET POTATOES



Ingredients:
serves 4
3 1/2 to 4 lbs of chicken – any combo you prefer, even cornish hens work great
1 yellow/sweet onion, cut into 1″ wedges
2 or 3 sweet potatoes, peeled and cut into 1″ pieces
olive oil
salt and pepper
maple syrup
fresh thyme sprigs


Steps:
1. Heat the oven to 400° F
2. Rinse the chicken, pat it dry, drizzle some olive oil on both sides and season with salt and pepper

3. Cut up the veggies, toss in a large bowl with olive oil, maple syrup and salt and pepper to taste
4. Place the veggies in a 9″ x 13″ baking dish, lay the pieces of chicken on top and give everything another drizzle of the maple syrup (you can never have enough sugary sauce goodness with this recipe). Throw some fresh sprigs of thyme on top of the mix and bake for about 1 hour and 15 minutes. 


Give everything a good stir halfway through the cooking process and let the dish rest at least 10 minutes before serving

this dish is also easy to double a batch to serve a big crowd, i served 8 people one night with it roasting in two dishes, plus leftovers… and the leftovers are always the best part because the syrup really soaks into everything… mmm im getting hungry just thinking about it!
