>quinoa + spinach soupster goodness


ive gotta say, nothing beats a great bowl of soup on a cold winter’s day to warm the cockles of my belly…
oh yeah, that and a side of a salad or sandwich, anything for more flavors!
i made this soup on monday and was able to create two hearty dinners for me and the hub and two lunches para moi, at my fine dining establishment at work, el cubicle… add some netflix instant queue and you almost feel like you’re not even there, almost

if you’d like to give it a try, its super simple to make and even the non-veggie eaters of the house found it quite tasty

The texture thickens as the quinoa soaks up more of the liquids, i added some water to reheat it as the days went on.

Ingredient List:
Serves 6
1 med. red onion, diced – 1 1/4 c.
3 c. low sodium veg broth
4 c. water
3/4 c. quinoa, rinsed
1 14.5 oz. can diced tomatoes (with basil, garlic, oregano), or plain – add fresh/dried basil, oregano, garlic
2 c. frozen veggies
10 oz. spinach leaves
salt and pepper to taste

Heat large saucepan over medium heat
Saute onion until soft
Stir in broth and water, bring to boil
Add quinoa, reduce heat to medium-low
Cover, simmer for 15 minutes
Stir in tomatoes, frozen veggies, and spinach leaves
Simmer uncovered uncovered until spinach and quinoa are tender
Salt and pepper to taste
