>i’ve made this recipe a couple of times in the past, it’s always had good reviews so i decided to put it to the tru test – the father’s day dinner test – verdict’s in: full happy bellies all around

mission accomplished :0) – ENJOY!

Lamb Shanks with Pearl Barley and Root Veggies
Prep time: 10 minutes
Cook time: 8-10 hours
Serves: 4 loved ones

1/2 cup pearly barley
1 cup frozen chopped onions
2 parsnips, peeled, sliced
1 cup baby carrots, cut into 1/2″ pieces
1 fennel bulb, chopped
4 lamb shanks, rinsed and patted dry
2 teaspoons Montreal steak seasoning
2 cups low sodium beef broth
1 cup red wine, Cabernet Sauvignon
1 packet (.9oz) onion and mushroom soup mix

– in the bottom of a 5-6 qt. slow cooker combine the barley, onions, parsnips, carrots and fennel
– season lamb shanks with steak seasoning and place in slow cooker on top of barley and veggies
– in a medium bowl combine the beef broth, red wine and soup mix – pour over lamb shanks
– cover and cook on low for 8-10 hours… look for the meat-falling-off-the-bone-GOODNESS
